pork white bean chili
The Pork Chili is based on a White Chicken Chili recipe I have used for years the fresh peppers and herbs are from my garden this is a very filling and great tasting dish. We could not stop eating it. In the recipe I used fresh pork ribs but I thought the tenderloin will work just as well.

Ingredients
- 1 &1/2 pound pork tenderloin boiled and cut in cubes
- 2 tablespoons oilve oil
- 1 medium onion chopped
- 1/4 cup fresh basil chopped fine
- 1/4 cup fresh cilantro chopped fine
- 1 can diced tomatoes plain do not drain
- 1 cup pork broth saved from boiling tenderloin
- 1 large jalapenos, fresh chopped
- 1 medium poblano pepper chopped
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1/2 teaspoon oregano leaves
- 1/2 to 1/4 teaspoon cayenne pepper
- 1 can white beans (cannellini) do not drain
- - salt to taste
- 1 bag finely shreaded cheese colby jack or chedder
How To Make pork white bean chili

Step 1Heat olive oil in 3 quart saucepan add chopped onion cook over medium high heat and cook 2 minutes do not brown. Stir in broth from boiling pork tenderloin you can use more if you want to add can of undrained tomatoes add chilies fresh basil and cilantro.

Step 2Add dry spices, garlic,cumin,Oregano . Simmer for 30 minutes. Stir in cooked pork and and cannellini beans simmer for 10 minutes

Step 3If you wish to top off chili with cheese use Finley shredded Colby jack or chedder. This is optional I did not use cheese on mine
