pork white bean chili

The Pork Chili is based on a White Chicken Chili recipe I have used for years the fresh peppers and herbs are from my garden this is a very filling and great tasting dish. We could not stop eating it. In the recipe I used fresh pork ribs but I thought the tenderloin will work just as well.

Ingredients

  • 1 &1/2 pound pork tenderloin boiled and cut in cubes
  • 2 tablespoons oilve oil
  • 1 medium onion chopped
  • 1/4 cup fresh basil chopped fine
  • 1/4 cup fresh cilantro chopped fine
  • 1 can diced tomatoes plain do not drain
  • 1 cup pork broth saved from boiling tenderloin
  • 1 large jalapenos, fresh chopped
  • 1 medium poblano pepper chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon oregano leaves
  • 1/2 to 1/4 teaspoon cayenne pepper
  • 1 can white beans (cannellini) do not drain
  • - salt to taste
  • 1 bag finely shreaded cheese colby jack or chedder

How To Make pork white bean chili

  • Step 1
    Heat olive oil in 3 quart saucepan add chopped onion cook over medium high heat and cook 2 minutes do not brown. Stir in broth from boiling pork tenderloin you can use more if you want to add can of undrained tomatoes add chilies fresh basil and cilantro.
  • Step 2
    Add dry spices, garlic,cumin,Oregano . Simmer for 30 minutes. Stir in cooked pork and and cannellini beans simmer for 10 minutes
  • Step 3
    If you wish to top off chili with cheese use Finley shredded Colby jack or chedder. This is optional I did not use cheese on mine
