Pork "the other white meat" is high in protein and low in fat. You can often buy them on sale and usually come two per pack. We usually have one and freeze the other. I love recipes that don't require a trip to the store. Serve with roasted carrots and garlic mashed potatoes and you have a winner!

Ingredients
- 1 - 3/4 lb. pork tenderloin
- 1 teaspoon dijon mustard
- 1/2 teaspoon dried thyme
- 2 teaspoons crushed black peppercorns
How To Make pork tenderloin with mustard crust

Step 1Pat tenderloin dry. Mix mustard and thyme and brush over entire tenderloin.

Step 2Grind peppercorns all over tenderloin. Place on rack in roasting pan and roast at 400 degree oven for 30 to 40 minutes.

Step 3Doubles easily!!!!! Enjoy!
