How To Make pork tenderloin with creamy dill sauce
-
Step 1Preheat oven to 400°F (200°C).
-
Step 2Pat the pork tenderloin dry with paper towels.
-
Step 3Rub with olive oil, then season evenly with garlic powder, onion powder, smoked paprika, salt, and pepper.
-
Step 4Heat an oven-safe skillet (cast iron works great) over medium-high heat.
-
Step 5Sear the pork for 2–3 minutes per side until golden brown.
-
Step 6Transfer the skillet to the oven and roast for 15–20 minutes, or until the internal temperature reaches 145°F (63°C) for medium.
-
Step 7Remove from oven, transfer pork to a cutting board, and tent with foil to rest for 5–10 minutes.
-
Step 8In a saucepan over medium heat, add a drizzle of olive oil if needed. Sauté the green onion and garlic until softened and fragrant, about 2 minutes.
-
Step 9Reduce heat to low. Add cream cheese, heavy cream, and chicken broth, whisking until smooth and fully melted (this may take 2–3 minutes).
-
Step 10Stir in lemon juice, Dijon mustard, and fresh dill (or dried dill). If using red pepper flakes, add them now.
-
Step 11Simmer for 2–3 minutes until slightly thickened.
-
Step 12Season with salt and pepper to taste.
-
Step 13Slice the pork tenderloin into 1/2-inch medallions.
-
Step 14Spoon the cream cheese and dill sauce over the slices or serve it on the side.
-
Step 15Garnish with an extra sprinkle of fresh dill for a pop of color, if desired.
