pork tenderloin w/ garlic & glaze

When I find Pork loin on sale, I stock up on it. Well, this is one of my all time favorite ways of making it. A dear friend of mine, no longer with us, gave me this recipe years ago..I have made it so many times I have it memorized. I changed it of course to suit our taste. The garlic permeates the meat, and the glaze is fantastic. I hope you try it, and enjoy it as much as we do.. My pictures.

Ingredients

  • 1 - ( 2 1/2 - 3 ) pound pork tenderloin, i used pork tenderloin end
  • 1/2 teaspoon pepper
  • 1 teaspoon cumin, dried
  • 1 - 2 teaspoons rosemary, dried
  • 1/2 teaspoon paprika, i use smoked
  • 1/2 - 1 teaspoons accent flavor enhancer or salt
  • 5 - 6 cloves garlic, whole ( mince one for the top of loin)
  • GLAZE
  • 1/4 cup balsamic vinegar
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon soy sauce
  • 1/2 cup brown sugar
  • 1 teaspoon dry mustard
  • 1/2 cup water
  • 1 tablespoon corn starch

How To Make pork tenderloin w/ garlic & glaze

  • Step 1
    Rinse pork loin and dry. Cut about 4 - 5 slits on top of the loin; about 1 1/2 inches deep. Stuff a clove of garlic in each slit.
  • Step 2
    In a small bowl; mix the seasonings and minced garlic. Rub the pork well with the spice mix. It is now ready to go into the slow cooker.
  • Step 3
    Lay the pork loin inside the slow cooker. Pour a small amount of water, just enough to cover the bottom of the crock. Make sure not to wash the seasoning from the meat in the process.
  • Step 4
    Cook on high setting for an hour. Then turn down to low, cook for 3 -4 hours longer. Or cook on low for 5 - 6 hours. My low setting gets pretty hot. ( Mine took a total of 1 hour on high, and 3 hours on low). So, keep checking when basting for doneness. Baste the loin every half hour or so, with the glaze.
  • Step 5
    When meat is finished, remove it from the slow cooker, and let it rest for 5 minutes or so. Slice and plate, and serve with remaining glaze.
  • The glaze
    Step 6
    Making the glaze: Mix all of the ingredients in a small saucepan; over medium heat, stirring frequently so the sauce does not burn. When sauce comes to a simmer..stir until thickened. Remove from heat and set aside.
