Ingredients
- 1/4 cup prepared mustard
- 2 pounds pork tenderloin
- 1/4 cup vegetable oil
- 2 - cloves garlic, cut in half
- 1/4 cup carrot, chopped
- 1/4 cup celery, chopped
- 1/4 cup lime juice
- 1/4 cup tequila
- 1 tablespoon red chiles, ground
- 1 teaspoon salt
- 1 teaspoon dried oregano leaves
- 1 teaspoon dried thyme leaves
- 1/4 teaspoon pepper
- 4 cups tomatoes, chopped
- 1/4 cup onion, chopped
- 1 - bay leaf
- 1/4 cup snipped fresh parsley
How To Make pork tenderloin in tequila

Step 1Spread mustard over the pork tenderloin.

Step 2Heat oil and garlic in a 10-inch skillet until hot.

Step 3Cook pork in oil over medium heat until brown.

Step 4Remove garlic.

Step 5Stir in remaining ingredients except the parsley.

Step 6Heat to boiling then reduce the heat.

Step 7Cover and simmer until pork is done, about 30 minutes.

Step 8Remove the bay leaf and sprinkle with the parsley.

Step 9Serve.
