Pork Tenderloin and Fruit Kebabs
Sweet tea and kebabs -- Southern Heaven
1 lbpork tenderloin, cut into 1 inch pieces
2 Tbspdijon mustard
2 Tbspseasoned rice vinegar - sweet
2 Tbsporange juice, fresh
1 largeorange, cut in 8 pieces - skin left on
1 slicefresh pineapple - 3/4 inch thick,chunked bite size
1 largegreen bell pepper,chunks (optional)
1 largefresh peach, chunked bite size (optional)
How to Make Pork Tenderloin and Fruit Kebabs
- Combine honey, Dijon Mustard, vinegar, orange juice and garlic in a 1. zip- top bag. Add tenderloin pieces and let sit for 30 minutes.
- Alternately thread pork tenderloin pieces, orange sections and pineapple chunks onto skewers.
(First meat, then orange section, then meat again and finally a pineapple chunk). Repeat until all meat and fruit are skewered.
- Place on pre-heated grill and cook for about 8 minutes turning every two minutes, or until done.
