Years ago, I got this recipe from a grocery store. Even my 3 yr old daughter loved it!

Ingredients

  • 2 pounds boneless pork
  • 1 tablespoon olive oil ( i use grape seed oil instead)
  • 1 teaspoon chili powder
  • 1 teaspoon oregano, dried
  • 1/2 teaspoon cumin
  • 2 - onions
  • 6 - garlic pegs
  • 16 ounces white corn, frozen
  • 1 can black beans, 16 oz
  • 1 can kidney beans, 16 oz
  • 1 can chicken broth, 16 oz
  • 1 can green chiles, mild chopped 4 oz - optional
  • 1/2 cup green onions
  • - sour cream
  • - rice
  • - corn bread

How To Make pork stew

  • Step 1
    The day before you plan to cook the stew Cut pork into 1 inch pieces. Season w/ ONION POWDER, GARLIC POWDER, CUMIN, OREGANO, CHILI POWDER, McCORMICK GARLIC & HERB(NO SALT) SEASONING, LAWRY'S SEASONED SALT. I just shake spices onto the meat. Place in a zip lock bag, & fridge overnight.
  • Step 2
    In a large pot, heat oil, add the measured amount of CHILI POWDER, OREGANO, & CUMIN, cook 2 minutes on low heat.
  • Step 3
    Add ONIONS and meat, cook 20 - 30 minutes, stir often.
  • Step 4
    Add CORN, BEANS, & CHICKEN BROTH. Smash & chop GARLIC, and add.
  • Step 5
    Start cooking RICE in another pot now. Brown rice or wild rice take a bit longer to cook than white rice! Cook stew 20 minutes. Medium heat.
  • Step 6
    Serve over RICE. Garnish w/ SOUR CREAM & GREEN ONIONS My family likes this with CORN BREAD
