Ingredients

  • 2 tablespoons butter
  • 4 pounds boneless pork loin roast, trimmed of excess fat
  • 3-6 cloves garlic, finely chopped
  • 1 cup dry sherry or chicken stock
  • 2 tablespoons worcestershire sauce
  • 1 tablespoon mustard, ground
  • 1 teaspoon thyme, dried
  • 1 teaspoon ground ginger
  • - salt and pepper to taste
  • 1/2 cup plum jam or jelly

How To Make pork roast with plum sauce

  • Step 1
    Heat the butter in a skillet over moderate heat and brown the pork on all sides.
  • Step 2
    Transfer to a slow cooker.
  • Step 3
    Mix the remaining ingredients except the plum jelly and pour over the pork.
  • Step 4
    Cook covered on low until the pork is tender, 7 to 9 hours.
  • Step 5
    Transfer the pork to a serving platter and skim off and discard the fat from the pork juices.
  • Step 6
    Stir the jelly into the juices and cook on high for 15 minutes. Slice the pork and spoon the sauce on top.
