I made this dish over the weekend. The pork enchiladas ring!! OMG!! it is/was delicious. I followed a recipe for "Chicken" Enchiladas ring but as you can see... it has pork in it. No chicken!! This is called cooking with what you have in the refrigerated! LOL... I substituted almost every ingredient. Instead of chopped tomatoes, I used tomato sauce. Instead of black olives, I used green olive. I added sliced mushrooms, and Velveeta cheddar cheese!! MMMM....MMMM... GOOOD!!!

Ingredients

  • 4 medium pork loin chops, boneless, shredded
  • 1 can tomato sauce
  • 1 bottle sliced green olives w/pimentos
  • 1 can sliced mushrooms
  • 2 cups velveeta cheddar cheese
  • 2 cans crescent rolls
  • 1 - yellow onion, sliced or chopped
  • 1/2 cup miracle whip mayo

How To Make pork ring

  • Step 1
    place pork loins in a crock pot. season to taste. slice onions on top, let it cook for 4 hours or until tender.
  • Step 2
    Shred Pork. Mix all ingredients in a bowl. Heat oven to 375F.
  • Step 3
    Grease pan with butter spray. lay crescent rolls out, wide end creates the circle, overlapp rolls until circle closes. scoup meat mixture onto wide end of rolls, fold crescent roll points inward, cuffing the meat. top with crushed tortillas and remaining cheese.
  • Step 4
    Bake for 25 minutes.
