This is from one of WQED's cookbooks, "America's Home Cooking: One Skillet". All recipes submitted by viewers & friends...there's a lot of really good recipes! This is one of six cookbooks I have from them...it supports public broadcasting, which I think is important!

Ingredients For pork & pineapple stir fry

1c cbeef broth
-
1/4 ctomato paste
-
1 Tbsplow-sodium soy sauce
-
2 tspcornstarch
-
2 tspbrown sugar
-
2 tspcurry powder
-
1/4 tspchili powder
-
2 tspvegetable oil, divided
-
nonstick cooking spray
-
1 lbpork tenderloin, cut in short, thin strips

1 csliced onion
-
1 cgreen bell pepper
-
2 tsppeeled & minced fresh ginger
-
1-1/2 tspminced garlic
-
1 canlight pineapple chunks, drained (15.4 oz)

4 ccooked rice
How To Make pork & pineapple stir fry

1Combine first 7 ingredients; set aside. Heat 1 tsp. oil over med-high heat in large nonstick skillet coated w/cooking spray. Add pork, stir-fry 4 min. Remove pork from pan; set aside. Heat other tsp. oil in pan; add onions & bell pepper, stir-fry 5 min or until vegetables are tender. Add ginger & garlic; cook 30 seconds. Return pork to pan; add broth mixture and pineapple, stir-fry 3 minutes or until thoroughly heated through. Serve over rice.
