Was looking for a recipe to cook pork loin in the crock pot, but also wanted it to be a one pot meal to include rice and veggies. So this is what I came up with.

2 c
rice, uncooked
2 c
carrots, cubed, can use frozen
2 c
peas, i used frozen
3 can(s)
cream of mushroom soup

How to Make Pork Loin, Rice and Veggies


  • 1Spray inside of slow cooker with cooking oil
  • 2Dice carrots and place on bottom of cooker. Can use frozen carrots, if so heat in microwave and wait until 1 hour of cooking time is remaining to add them
  • 3Wash rice and place on top of carrots
  • 4Mix water and cream of mushroom soup together and pour 3/4 of mixture over rice, mix gently
  • 5Add pork loin and pour remaining mushroom mixture over them.
  • 6I used frozen peas and heated them in the microwave, so it wouldn't slow cooking.
  • 7Add peas, when 1 hour of cooking time is remaining.
  • 8Needs to cook 4 hours on High temp or 6-8 hours on Low temp.
