Was looking for a recipe to cook pork loin in the crock pot, but also wanted it to be a one pot meal to include rice and veggies. So this is what I came up with.

Ingredients

  • 8 slice
    pork loin
  • 2 c
    rice, uncooked
  • 2 c
    carrots, cubed, can use frozen
  • 2 c
    peas, i used frozen
  • 3 can(s)
    cream of mushroom soup
  • 5 c
    water

How to Make Pork Loin, Rice and Veggies

Step-by-Step

  1. Spray inside of slow cooker with cooking oil
  2. Dice carrots and place on bottom of cooker. Can use frozen carrots, if so heat in microwave and wait until 1 hour of cooking time is remaining to add them
  3. Wash rice and place on top of carrots
  4. Mix water and cream of mushroom soup together and pour 3/4 of mixture over rice, mix gently
  5. Add pork loin and pour remaining mushroom mixture over them.
  6. I used frozen peas and heated them in the microwave, so it wouldn't slow cooking.
  7. Add peas, when 1 hour of cooking time is remaining.
  8. Needs to cook 4 hours on High temp or 6-8 hours on Low temp.
