Ingredients

  • 4 large pork loin chops, patted dry
  • ground Himalayan pink salt, to taste
  • freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika or as needed
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 cup finely chopped white onions
  • 1/2 cup finely chopped red pepper
  • 4 large cloves garlic, pressed
  • 3 cups baby spinach, packed
  • 1 1/4 cups heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup dry white wine
  • 1/2 tablespoon Herbes de Provence
  • 1/4 teaspoon red pepper flakes, or to taste
  • 1/3 cup Grana Padano cheese (substitute Parmigiano-Reggiano or asiago cheese), grated

How To Make pork loin chops in creamy spinach sauce

  • Step 1
    Generously season chops on one side with salt, pepper, and smoked paprika; set aside.
  • Step 2
    In a deep skillet over medium-high heat, add butter and oil.
  • Step 3
    When it sizzles, add pork, seasoned side down, and season the top with salt, pepper, and paprika.
  • Step 4
    Sear for 3 minutes per side or until the internal temperature reaches 145º F. Transfer to a plate and set aside.
  • Step 5
    Reduce heat to medium. Add onions and sauté for 1 minute. Add red peppers and cook for 2 minutes. Add garlic and sauté for 45 to 60 seconds.
  • Step 6
    Add spinach and toss it around for 2 minutes.
  • Step 7
    Pour in heavy cream, chicken broth, and white wine. Add Herbes de Provence, red pepper flakes, and cheese. Stir to combine and bring the mixture to a simmer.
  • Step 8
    Reduce heat to medium-low and cook for 3 minutes.
  • Step 9
    Return the pork chops to the skillet including any accumulated juices and coat with the sauce; reheat for 2 minutes.
