Ingredients

  • 1 package eckrich sausage, diced
  • 1 - red onion, chopped
  • 1 - white onion, chopped
  • 1 - green bell pepper, chopped
  • 1 - red bell pepper, chopped
  • 1 - medium pork loin
  • 5-6 - red potaotes, cubed with skins on
  • 2 - carrots, diced
  • 1/2 - head of cabbage, chopped
  • 2 - strips of bacon
  • 1 can rotel tomatoes
  • 1 can water
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cajun seasoning

How To Make pork loin and sausage stew

  • Step 1
    Preheat oven to 350. You may need to lower the shelf because this needs a fairly large pan. I use a foil roaster pan. You can also use a large metal roaster pan.
  • Step 2
    Chop sausage, onions, green peppers, potatoes, carrots, and carrots. Put pork loin in bottom of pan, add chopped vegetables and sausage. Pour 1 can of rotel tomatoes and add 1 can of water on top. Season with salt and pepper. Lay strips of bacon across the top. Cover tightly with foil and bake for 2 1/2 - 3 hours.
