pork (bite size chunks)
1 lb
smoked pork sausage (diced)
2 large
white onions (chopped)
1 small
green bell pepper (chopped)
1 stick
celery (chopped)
2-3 clove
garlic (chopped)
1/2 bunch
green onions (chopped)
4 c
2 c
long grain rice, uncooked
creole seasoning to taste


1Using a black iron dutch oven saute pork and sausage on med high heat until brown, add chopped vegetables and cook until caramalized, add water season w/creole seasoning and bring to a boil, add rice stirring until rice begins to float, reduce heat to low, cover and cook for 30-45 min. stirring every 15 mins.returning cover after stirring until rice is done.
