  • 1 lb
    pork (bite size chunks)
  • 1 lb
    smoked pork sausage (diced)
  • 2 large
    white onions (chopped)
  • 1 small
    green bell pepper (chopped)
  • 1 stick
    celery (chopped)
  • 2-3 clove
    garlic (chopped)
  • 1/2 bunch
    green onions (chopped)
  • 4 c
  • 2 c
    long grain rice, uncooked
  • ·
    creole seasoning to taste



  1. Using a black iron dutch oven saute pork and sausage on med high heat until brown, add chopped vegetables and cook until caramalized, add water season w/creole seasoning and bring to a boil, add rice stirring until rice begins to float, reduce heat to low, cover and cook for 30-45 min. stirring every 15 mins.returning cover after stirring until rice is done.
