- 2 tablespoons sweet butter, unsalted
- 1 tablespoon grapeseed oil
- - salt, kosher variety, to taste
- - black pepper, freshly ground, to taste
- 2 medium pork tenderloins, about 8 ounces
- 1/4 cup shallots, finely chopped
- 1/4 cup orange marmalade
- 1 tablespoon ponzu sauce
- 1 clove baked garlic, smashed

Step 2Ponzu sauce is a light version of tamari sauce with lemony notes.

Step 3Gather your Ingredients (mise en place).

Step 4Place the oil and butter in a sauté pan over medium heat.

Step 5Salt and pepper both sides of the pork tenderloins.

Step 6Add the tenderloins to the pan. Cook until browned, about 4 – 5 minutes per side.

Step 7Remove from the pan, and reserve.

Step 8Add the shallots to the pan, and cook until softened, about 3 – 4 minutes.

Step 9Add the ponzu sauce, orange marmalade, and garlic, and then stir to mix.

Step 10Add the pork tenderloins, and cook over low heat, until the sauce begins to thicken, about 3 – 5 minutes.

Step 12Slice, add to a plate, and drizzle with that yummy sauce. Enjoy.
