pork essentials: asian influence spicy pork
This recipe has its roots in a Korean beef dish; however, I subbed out the beef for pork, and made a few changes to the spices to suit my taste. Serve this over some nice long-grain white rice, or place on top of a bed of butter lettuce; either way, it is a wonderful, and quick-to-make dish. As a matter of fact, if you already have some freshly-ground pork, you can have this dish out to your hungry guests in a quick 30 minutes. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- THE SAUCE
- 1/4 cup coconut sugar
- 1/4 cup tamari sauce
- 1 tablespoon sesame oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon ginger, freshly ground
- 1/2 teaspoon sweet paprika
- 1/4 teaspoon white pepper, freshly ground
- 1/4 teaspoon ground cumin
- - srirachia sauce, to taste (optional)
- THE PORK
- 1 tablespoon grapeseed oil
- 1 pound pork tenderloin, roughly ground
- 2 cloves garlic, minced
- ADDITIONAL ITEMS
- - white rice, or butter lettuce for serving
- - sesame seeds, for garnish

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3THE SAUCE

Step 4Add all the sauce ingredients to a non-reactive bowl.

Step 5Whisk to thoroughly combine, and reserve.

Step 6Chef’s Tip: If you are using the optional srirachia sauce, add a bit at a time, and then test for heat.

Step 7THE PORK

Step 8Add the grapeseed oil to a large skillet over medium heat.

Step 9When the oil begins to shimmer, add the ground pork, and cook for 2 – 3 minutes.

Step 10Chef’s Note: I grind my own meats; however, you can either get a pound of ground pork, or you can have your butcher grind a nice lean piece of tenderloin for you.

Step 11Add the minced garlic, and continue to cook (stirring often), until all the pink is gone from the pork, about 3 – 4 additional minutes.

Step 12Chef’s Note: Use a wooden spoon to break up the ground pork.

Step 13Add the sauce to the pan, and lightly simmer, for 5 – 7 minutes.

Step 14PLATE/PRESENT

Step 15Serve with butter lettuce, or over a plate of steamy rice. Enjoy.
