Ingredients
- 6 - pork loin chops, 3/4" thick
- 3 tablespoons butter
- 3 tablespoons all purpose flour
- 1.5 teaspoons salt
- 1/4 teaspoon pepper
- 14.5 ounces chicken broth
- 2 tablespoons cooking oil
- pinch salt
- pinch pepper
- 6 cups potatoes, thinly sliced
- 1 medium onion, sliced
- pinch paprika
- pinch parsley, chopped
How To Make pork chops with scalloped potatoes

Step 1In a saucepan, melt butter; stir in flour, salt and pepper.

Step 2Add chicken broth; cook and stir constantly until mixture boils.

Step 3Cook for 1 minute; remove from the heat and set aside.

Step 4In a skillet, brown pork chops in oil; season to taste with additional salt and pepper if desired.

Step 5In a greased 13 x 9 x 2 baking dish, layer potatoes and onion; pour the broth mixture over and place pork chops on top.

Step 6Cover and bake at 350 for 1 hour; uncover and bake 30 minutes longer or until potatoes are tender.

Step 7If desired, sprinkle with paprika and parsley.
