    pork loin chops, 3/4" thick
  • 3 Tbsp
  • 3 Tbsp
    all purpose flour
  • 1.5 tsp
  • 1/4 tsp
  • 14.5 oz
    chicken broth
  • 2 Tbsp
    cooking oil
  • pinch
  • pinch
  • 6 c
    potatoes, thinly sliced
  • 1 medium
    onion, sliced
  • pinch
  • pinch
    parsley, chopped

How to Make Pork Chops with Scalloped Potatoes


  1. In a saucepan, melt butter; stir in flour, salt and pepper.
  2. Add chicken broth; cook and stir constantly until mixture boils.
  3. Cook for 1 minute; remove from the heat and set aside.
  4. In a skillet, brown pork chops in oil; season to taste with additional salt and pepper if desired.
  5. In a greased 13 x 9 x 2 baking dish, layer potatoes and onion; pour the broth mixture over and place pork chops on top.
  6. Cover and bake at 350 for 1 hour; uncover and bake 30 minutes longer or until potatoes are tender.
  7. If desired, sprinkle with paprika and parsley.
