Found this recipe on the internet when we were lucky enough to get some great Georgia peaches and I was trying to figure out something to do with them. Turned out fantastic! I would double the sauce though...can not get enough of this sauce.

Ingredients

  • 4
    4oz boneless center-cut loin pork chops (about 1/4 inch thick)
  • 3/4 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/4 tsp
    ground red pepper
  • 2-3 Tbsp
    olive oil or cooking spray
  • 1 Tbsp
    minced shallots
  • 1 clove
    minced garlic
  • 1 1/2 c
    frozen peaches (use as many peaches as you want. the more the better in our experience)
  • 1/2 c
    chicken broth
  • 2 tsp
    brown sugar
  • 2
    thyme sprigs
  • 2 Tbsp
    bourbon
  • 2 tsp
    butter

How to Make Pork Chops with Bourbon-Peach Sauce

Step-by-Step

  1. 1. Sprinkle pork with salt and peppers. Heat a large skillet over medium-high heat. Coat pan with cooking spray. Add pork to pan; cook 2 1/2 minutes on each side or until browned. Remove pork from pan; keep warm.
  2. 2. Add shallots and garlic to pan; sauté 30 seconds. Add peaches and broth to pan; sauté 2 minutes. Add sugar and thyme to pan; cook 1 minute. Add bourbon and butter to pan; cook 4 1/2 minutes or until butter melts and sauce is slightly thickened. Discard thyme sprigs. Serve with pork.
