pork chops w/ creamy chive & onions & root veggies

In these COVID19 days, I don't like to go shopping too often & so try to do w/ what I have. I had pork chops, and then raided the pantry for other ingredients & literally just threw this together! Since I always keep adobo, Sazon and other spices from Goya on hand & had the cream cheese w/ chives..voila, a new recipe was born. Though hubby & I don't eat pork often, ( it tends to be tough,) I wasn't sure how it would come out, but the creamy chive, onions & the pork w/ the sesonings was so tender & the sweet potatoes just complimented the whole dish so well, no sides were needed.

Ingredients

  • 2 large 3/4" thick, bone-in pork chops
  • 1 tablespoon butter
  • 1 large sweet onion, sliced thin
  • 1 medium sweet potato, peeled cubed
  • 1 large red potato, don't peel, but cube
  • 1/4 teaspoon adobo, light seasoning w/ pepper
  • 1 cup chicken broth
  • 4 ounces or 1/2 cup, land o' lakes soft cream cheese w/chives
  • 2-1/2 teaspoon dry ranch dressing & dip mix
  • 1-1/2 teaspoon fresh chopped chives
  • 2 teaspoons fresh chopped parsley

How To Make pork chops w/ creamy chive & onions & root veggies

  • Step 1
    In medium pot, over med-high heat, add cubed sweet potatoes and red potatoes, fill w/ water until just coverd. Bring to boil, cook until just barely cooked, or par-boiled. drain, set aside. Season both sides of pork chops with the Adobo seasoning.
  • Step 2
    In large skillet over med-high heat, melt butter. Add onion slices & cook, stirring 5 mins or until light brown. Set aside. Heat oven to warm, in the meantime add pork chops to skillet & cook 5 minutes per side. Remove chops & place on a baking sheet & place in oven. to keep warm.
  • Step 3
    To skillet, add broth, cream cheese w/ chives and dry ranch seasonig mix over medium heat, gently whisking until slightly thickened. Transfer mix to a medium pot, adding par-boiled veggies, onions & pork chops, Cook over medium heat until pork is no longer pink inside, (About 6-10 minutes,) stirring gently a few times. Sprinkle on the fresh chopped chives, stir once more. remove from heat and spoon onto dishes or large bowls. Sprinkle w/ fresh parsley.
