Ingredients
- 1 tablespoon olive oil, extra virgin
- 2 teaspoons lemon rind, grated
- 2 tablespoons lemon juice, fresh
- 1 teaspoon oregano, fresh
- 3 cloves garlic, minced
- 4 - 4 ounces pork chops, boneless
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper

Step 1Combine first 5 ingredients in a 11 x 7" baking dish. Add pork, turning to coat. Let stand 30 minutes, turning pork occasionally.

Step 2Preheat broiler.

Step 3Remove pork from baking dish; discard marinade. Sprinkle pork evenly with salt & pepper. Place pork on a broiler pan coated with cooking spray. Broil 4 minutes on each side or until done.
