Ingredients
- 5 - pork chops, 1/2 inch thick
- 2 tablespoons shortening
- 1 teaspoon salt
- 1/2 teaspoon chili powder
- 1 dash pepper
- 3/4 cup uncooked long grain rice
- 1/2 cup chopped onion
- 1/4 cup chopped green pepper
- 3 1/2 cups tomatoes, cut up
- 5 - green pepper rings
- 1/2 cup sharp process american cheese, shredded
How To Make pork chop spanish rice

Step 1Trim excess fat from chops. Slowly brown chops in melted shortening, about 15 to 20 minutes; drain off excess fat.

Step 2Combine salt, chili powder, and pepper; sprinkle over meat. Add rice, onion, and chopped green peppers. Pour tomatoes over.

Step 3Cover and cook over low heat 35 minutes, stirring occasionally. Add green pepper rings and cook 5 minutes longer, or till rice and meat are tender. Sprinkle with cheese.
