My mother was a single mother and a lot of what I ate growing up were casseroles or one-pot-meals (I'm none the worse for it lol). She used to make this pretty often while I was growing and I loved it so much. Especially cuz she usually used my Granny's fresh corn & it was so sweet and juicy.

Ingredients

4-6 medium
potatoes, peeled & sliced
1 large
onion, sliced
2 can(s)
cream style corn or equivant of fresh creamed corn
1 lb
pork chops
salt & pepper
hot biscuits

How to Make Pork Chop Skillet

Step-by-Step

  • 1Heat lard in deep non-stick skillet and quickly brown pork chops.
  • 2On top layer onions & potato slices. Salt & Pepper to taste. Pour two cans of creamed style corn over everything.
  • 3Cover with a good fitting lid and cook on low till potatos are tender. Serve with hot biscuits.
