My mother was a single mother and a lot of what I ate growing up were casseroles or one-pot-meals (I'm none the worse for it lol). She used to make this pretty often while I was growing and I loved it so much. Especially cuz she usually used my Granny's fresh corn & it was so sweet and juicy.

Ingredients
- 4-6 medium potatoes, peeled & sliced
- 1 large onion, sliced
- 2 cans cream style corn or equivant of fresh creamed corn
- 1 pound pork chops
- - salt & pepper
- - hot biscuits
How To Make pork chop skillet

Step 1Heat lard in deep non-stick skillet and quickly brown pork chops.

Step 2On top layer onions & potato slices. Salt & Pepper to taste. Pour two cans of creamed style corn over everything.

Step 3Cover with a good fitting lid and cook on low till potatos are tender. Serve with hot biscuits.
