My mother was a single mother and a lot of what I ate growing up were casseroles or one-pot-meals (I'm none the worse for it lol). She used to make this pretty often while I was growing and I loved it so much. Especially cuz she usually used my Granny's fresh corn & it was so sweet and juicy.

Ingredients

  • 4-6 medium
    potatoes, peeled & sliced
  • 1 large
    onion, sliced
  • 2 can(s)
    cream style corn or equivant of fresh creamed corn
  • 1 lb
    pork chops
  • ·
    salt & pepper
  • ·
    hot biscuits

How to Make Pork Chop Skillet

Step-by-Step

  1. Heat lard in deep non-stick skillet and quickly brown pork chops.
  2. On top layer onions & potato slices. Salt & Pepper to taste. Pour two cans of creamed style corn over everything.
  3. Cover with a good fitting lid and cook on low till potatos are tender. Serve with hot biscuits.
