Ingredients

  • PORK BONE STOCK
  • 2 pounds pork neck bones
  • 1 - chicken carcass
  • 2 1/2 liters water
  • 1 large onion, chopped in half
  • 5 slices ginger
  • 2 tablespoons granulated sugar
  • 3 tablespoons Shaoxing wine
  • 2 tablespoons salt
  • 1 tablespoon white vinegar
  • 1 teaspoon white pepper
  • 1 tablespoon gogi berries
  • 15 - red dates
  • 4 stalks green onions cut into large chunks
  • FOR THE SOUP
  • 3 slices rib eye, sliced very thin
  • 1 large chicken breast, cut into small cubes
  • 1 pound shrimp, peeled and deveined
  • 4 ounces cremini mushrooms, sliced
  • 1 cup carrots, cut in matchsticks
  • 2 cups bean sprouts
  • 2 cups blanched rice noodles
  • CHILI CILANTRO LIME SAUCE
  • 1/2 cup fresh cilantro
  • 1/4 cup water
  • 1 tablespoon sambal olek
  • 2 tablespoons lime juice
  • 0 - salt to taste
  • SWEET AND SOUR CHILI SAUCE
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 3 tablespoons hoisin sauce
  • 2 teaspoons chili crisp

How To Make pork bone hot pot with two sauces

  • Step 1
    First, make the stock. Place the bone in two separate pots and add cold water. Bring to a boil, reduce to a simmer, and remove as much scrum that bubbles to the top as you can. Drain the bones and discard the water. Add the bones to an instant pot. Add the water, onion, ginger, sugar, shaoxing wine, salt, and white pepper. Pick pressure cook and lock the lid. Pressure cook for 1 1/2 hours. Turn off and let the pressure release naturally.
  • Step 2
    Meanwhile, cut up the items for the hot pot. Make the sauces. For the cilantro lime, add all ingredients to a food processor and process until well incorporated. Taste and adjust for salt
  • Step 3
    The sweet sour chili sauce just whisk all ingredients together and set aside. When the bones are ready, remove the lid and drain the bones from the pot through a fine mesh strainer. If the soup is greasy, put it through a degreaser.
  • Step 4
    Add the goji berries, red dates, and green onions. Place in a hot pot or just a pot on your stove. Taste and adjust for salt. Bring to a boil. Add the chicken and reduce heat. Add the items you want in your soup and ladle the hot broth over top. This will cook the beef and shrimp along with the noodles. Add the cilantro sauce. Serve with the sweet and sour sauce for dipping.
