This is a quick easy recipe that my family just loves. We like it spicy but you can tame it down a little by using the mild Rotel and using less or no hot sauce. It is great served in a flour tortilla or with tortilla chips.

Ingredients

  • 1 pound pork sausage
  • 1 can bush's black bean fiesta
  • 1 cup whole kernel sweet yellow corn (after drained)
  • 1 can rotel tomatoes w/habaneros
  • 2 1/2 cups cooked quick (5 min) rice
  • 3 tablespoons cholula's original hot sauce

How To Make pork black bean fiesta

  • Step 1
    In a 4-5 quart dutch oven brown pork sausage, drain in a colander. Cook rice while sausage is browning. Return sausage to dutch oven, add remainder of ingredients and allow to simmer on low heat for 20-30 minutes, stir occassionally.
  • Step 2
    Garnish with sour cream, shredded sharp cheddar cheese and sliced jalapeños.
  • Step 3
    Use Rotel w/chilies for a milder version and eliminate or reduce hot sauce. Substitute your favorite hot sauce for the Cholula's if desired.
