Pork Black Bean Fiesta

Renae Garrett

This is a quick easy recipe that my family just loves. We like it spicy but you can tame it down a little by using the mild Rotel and using less or no hot sauce. It is great served in a flour tortilla or with tortilla chips.

How to Make Pork Black Bean Fiesta

  1. In a 4-5 quart dutch oven brown pork sausage, drain in a colander. Cook rice while sausage is browning. Return sausage to dutch oven, add remainder of ingredients and allow to simmer on low heat for 20-30 minutes, stir occassionally.
  2. Garnish with sour cream, shredded sharp cheddar cheese and sliced jalapeƱos.
  3. Use Rotel w/chilies for a milder version and eliminate or reduce hot sauce. Substitute your favorite hot sauce for the Cholula's if desired.
