I'm told this is VERY similar to the Pork Salad recipe they serve at Cafe Rio. I've never had it as I don't get out to eat very often. And when someone recommends a recipe from a restaurant that I can then make for cheaper, that just makes it even better!!!

Ingredients
- PORK BARBACOA
- 6 pounds pork loin
- 1 bottle (16 oz) salsa
- 1 can (12 oz) coke (not diet)
- 1 cup brown sugar
- LIME-CILANTRO RICE
- 2 1/4 cups long grain rice, uncooked
- 1 bunch cilantro, fresh
- 2 - limes, juiced
- 4 cloves garlic
- CREAMY TOMATILLO SALAD DRESSING
- 1 package ranch dressing mix
- 3 - tomatillos, fresh
- 1 cup mayo
- 1 cup buttermilk
- 1 cup cilantro, fresh
- 3 cloves garlic
- 1/8 teaspoon cayenne
- 2 teaspoons tabasco sauce
- 1 - limes, juiced
- ADDITIONAL TRIMMINGS FOR SALAD
- - tortillas, flour
- - romaine lettuce
- - black beans
- - guacamole
- - pico de gallo
- - cheese
- - sour cream
- - tortilla strips
How To Make pork barbacoa salad

Step 1Place pork in crock pot and fill it ½ way up the pork with water. Cook on high for 5 hours. Drain off water.

Step 2Cut pork in thirds. Mix together sauce ingredients and put on top of pork. Cook an additional 3 hours on high.

Step 3Shred pork with forks. Leave it on low until ready to serve.

Step 4FOR RICE Chop garlic and cilantro.

Step 5Heat 2 Tbs. of oil in a skillet. Add rice and all Chopped ingredients. Saute for 3-5 minutes, stirring frequently.

Step 6Put 4 cups of water and lime juice in a rice cooker. Add rice mixture to the cooker and cook according to cooker’s directions. If you don’t have a cooker, combine rice, water and lime juice in a 3 quart pot and bring to a boil. Then reduce heat and simmer until all the liquid is absorbed by the rice.

Step 7FOR SALAD DRESSING Blend all dressing ingredients in blender and mix until smooth. Refrigerate until ready to serve (we REALLY like this so I make extra)

Step 8TO ASSEMBLE SALAD Place 1 tortilla on individual plates or bowls, top with rice, pork, romaine lettuce, black beans, cheese and any other of the salad trimmings you would like. Top all with Tomatillo salad dressing
