This recipe was given to me by my mother-in-law.

Ingredients

  • 1 pound lean pork, cubed
  • 3 medium potatoes, small cubes
  • 1 medium onion, chopped
  • 1 clove garlic, finely minced
  • 4 medium jalapeno peppers, chopped * (see note below)
  • 3 large tomatoes, peeled, chopped very small* (see note below)
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 2 teaspoons salt
  • 1/2 cup water

How To Make pork and chilies

  • Step 1
    Brown pork in small amount of cooking oil. Drain. Add onions, garlic, and peppers. Stir until they are browned. Add potatoes, tomatoes (with juices), cumin, chili powder, salt, and water. Simmer on low heat until potatoes are done.
  • Step 2
    Serve with warm tortillas and sour cream.
  • Step 3
    NOTES: *If you don't like a lot of spice and heat, you can use less jalapeno peppers. *Fresh tomatoes can be replaced with a 28 oz. can of stewed tomatoes.
