Ingredients
- 1 pound cubed pork shoulder, butte or country rib
- 5 cloves garlic cleaned and minced
- 3 bay leaves, dried
- 1 cup water
- 1/2 cup soy sauce, dark
- 1/2 cup white vinegar
- 5 to 6 whole peppercorns + a few more crushed
How To Make pork adobo
-
Step 1preheat oven to 400° Rub pork with a little oil Season with salt and pepper Roast for 20 minutes
-
Step 2Remove pork from oven Place all ingredients in a good size pot Bring to a boil, let it boil for 20 minutes Keep your eye on the pot. Turn the heat to simmer, cover and cook until meat is tender, turn the stove to low and stir frequently until most of the liquid evaporates. I let it go for about 45 minutes adding a little water. My stoves cooks HOT! At this time you can add 2 teaspoons of sugar and blend with the meat. I recommend it.
-
Step 3That's It. Serve over White Rice and sides of your choice. Or serve with potatoes or pasta with sides. You decide.
