pineapple ham steak (mini-crockpot)
I recently bought a mini-slow cooker and have been adapting recipes for it. I am a single-person household, and while I like my own cooking, I really don't want lots of leftovers, even if they are delicious. A ham steak is a great way to enjoy ham without having to worry about days of leftovers. I think this recipe would work without changes in a 2 qt slow cooker, as well.

Ingredients
- 8 ounces crushed pineapple, drained
- 1/4 cup brown sugar
- 1 tablespoon sherry
- 1 pinch cayenne pepper
- 8 ounces ham steak
How To Make pineapple ham steak (mini-crockpot)

Step 1Coat the inside of your mini-crock with a little oil, if you wish. Place drained pineapple in the bottom.

Step 2Mix brown sugar and sherry to make a paste. Stir in cayenne.

Step 3Cut ham steak in half. Coat each half with the brown sugar and place in mini-crock. Any remaining brown sugar can be scraped in on top of the pineapple.

Step 4Cook on low for 2 to 3 hours. Spoon some of the pineapple and juices onto meat to serve.

Step 5I used a 1 1/2 quart slow cooker. You can probably add a second ham steak with the same amount of the other ingredients. You can use other liquors (rum, whiskey) and certainly other spices (ginger, cinnamon, cloves) - I view this recipe as a roadmap! You can use some of the drained pineapple juice instead of liquor. Leftover pineapple is good on ice cream, pancakes, waffles, French toast.
