Ingredients
- 8 lb - pernil (pork loin can be substited)
- 1/2 cup olive oil
- 3 tablespoons chopped garlic
- 12 ounces spanish olives
- - salt to taste
- - pepper to taste
- 1 teaspoon oregano, dried
- 1 teaspoon paprika
- 1 teaspoon onion powder
How To Make pernil

Step 1Combine all ingredients in bowl except for the pork roast. Using a paring knife, make little holes in the roast. Rub entire roast with mixture and press olives into the holes of the meat.

Step 2Place in roasting pan and roast at 350 degrees for 3 hours, until internal tempertures reach 180 degrees.
