  • 8 lb
    pernil (pork loin can be substited)
  • 1/2 c
    olive oil
  • 3 Tbsp
    chopped garlic
  • 12 oz
    spanish olives
  • ·
    salt to taste
  • ·
    pepper to taste
  • 1 tsp
    oregano, dried
  • 1 tsp
  • 1 tsp
    onion powder

How to Make Pernil


  1. Combine all ingredients in bowl except for the pork roast. Using a paring knife, make little holes in the roast. Rub entire roast with mixture and press olives into the holes of the meat.
  2. Place in roasting pan and roast at 350 degrees for 3 hours, until internal tempertures reach 180 degrees.
