Ingredients For pernil

8 lbpernil (pork loin can be substited)

1/2 colive oil

3 Tbspchopped garlic

12 ozspanish olives
-
salt to taste

pepper to taste

1 tsporegano, dried

1 tsppaprika
-
1 tsponion powder
How To Make pernil

1Combine all ingredients in bowl except for the pork roast. Using a paring knife, make little holes in the roast. Rub entire roast with mixture and press olives into the holes of the meat.

2Place in roasting pan and roast at 350 degrees for 3 hours, until internal tempertures reach 180 degrees.
