Ingredients

  • 8 lb - pernil (pork loin can be substited)
  • 1/2 cup olive oil
  • 3 tablespoons chopped garlic
  • 12 ounces spanish olives
  • - salt to taste
  • - pepper to taste
  • 1 teaspoon oregano, dried
  • 1 teaspoon paprika
  • 1 teaspoon onion powder

How To Make pernil

  • Step 1
    Combine all ingredients in bowl except for the pork roast. Using a paring knife, make little holes in the roast. Rub entire roast with mixture and press olives into the holes of the meat.
  • Step 2
    Place in roasting pan and roast at 350 degrees for 3 hours, until internal tempertures reach 180 degrees.
