Ingredients
- 2 1/4 cups coconut oil
- 1 1/2 pounds bone in center pork chop (this should be 2 chops, .75lb each)
- 2 tablespoons ground ginger
- 1/2 tablespoon ground chipotle
- 1/2 teaspoon ground smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
How To Make perfect pork chop

Step 1Preheat oven to 375

Step 2In medium, non-stick, oven-safe skillet heat coconut oil to medium high.

Step 3Meanwhile, using a kitchen mallet, tenderize the chops. Reshape the chops and press each side into the rub. Rub well into meat.

Step 4Sear chops for 4 mins, turn and sear for 4 minutes on other side. Drain off excess oil and leave chops in skillet.

Step 5Place in oven until internal temperature reaches 150. Allow chops to rest 10 before serving.
