  • 2 1/4 c
    coconut oil
  • 1 1/2 lb
    bone in center pork chop (this should be 2 chops, .75lb each)
  • 2 Tbsp
    ground ginger
  • 1/2 Tbsp
    ground chipotle
  • 1/2 tsp
    ground smoked paprika
  • 1 tsp
  • 1/2 tsp
    black pepper

How to Make Perfect Pork Chop


  1. Preheat oven to 375
  2. In medium, non-stick, oven-safe skillet heat coconut oil to medium high.
  3. Meanwhile, using a kitchen mallet, tenderize the chops. Reshape the chops and press each side into the rub. Rub well into meat.
  4. Sear chops for 4 mins, turn and sear for 4 minutes on other side. Drain off excess oil and leave chops in skillet.
  5. Place in oven until internal temperature reaches 150. Allow chops to rest 10 before serving.
