I have always loved this recipe. It isn't that hard to make just a little messy. This is great for a crowd. Hope you enjoy!

Ingredients
- 4 pounds pork loin
- 1/2 teaspoon kosher salt
- 1/4 cup dijon mustard
- 2 tablespoons buttermilk
- 2 cups fresh whole wheat breadcrumbs
- 2 tablespoons cracked black peppercorn
- 2 teaspoons assorted peppercorn, crushed
- 2 teaspoons fresh thyme, chopped
How To Make peppercorn crusted pork loin

Step 1Preheat oven to 325.

Step 2Sprinkle roast with salt. Combine mustard & buttermilk, spread over all sides of roast. Combine fresh breadcrumbs in a bowl with remaining ingredients. Press evenly over entire roast. This will be messy, I do this on a large piece of wax paper.

Step 3Place roast on a lightly greased rack over roasting pan. Bake at 325 for till reach 145 degrees about 75 minutes.. Let stand for at least 10 minutes, do not tent with aluminum will make crust moist. Enjoy!
