This is a recipe that I am not sure where it came from, but is a favorite, especially during the winter when then the grill isn't handy The cayenne pepper is what brings " a little kick " to this recipe. Use to your best judgement, can be a little spicy, so use less if you want.

Ingredients
- 2 slabs - any type of ribs you want / like
- 3 cups rough cut celery, corrots, onions
- 2 - 3 cloves sliced / chopped garlic
- 1 bottle beer - any cheap kind
- 2 teaspoons ground cayenne pepper
- to taste - salt and pepper
- 2 tablespoons olive oil - any kind
- 2 cups brown sugar, firmly packed
- to taste - any stlye BBQ sauce you like
How To Make oven baked ribs

Step 1Start with lining a deep sided baking dish w/ the rough cut vegtables. They only need to be washed, peeled isn't needed because you will throw away once meat has cooked.Sprinkle garlic over vegtables. Garlic powder works fine if no fresh around. Set aside. (I like to use a cheap aluminum pan, throw away for easy clean up.)

Step 2Cut the slabs of ribs in half making four portions. Rub olive oil on each side of meat,then cayenne pepper on each side. Salt and pepper each side. Next, lay the meat on top of the vegtables, divide brown sugar and form on top of each piece of meat. here is where the beer comes in... without pouring beer on the meat.. pour in bottom of dish enough to cover vegtables, but not touch the meat. Cover with foil tightly and bake for 2 1/2 - 3 hrs. hrs @ 300.

Step 3When done remove foil, transfer meat to a plate, drain liquid, remove vegatbles ( throw away). Place meat back into pan, add bbq sauce over meat, if you want, also good without, and do not cover, place back in oven for 15 mins and serve.
