norma's pork loin with fried apples
I've been making this dish for many years. Decided to make it again tonight for me and Woody. If my son-in-law was here there would not be any left-overs. My family loves the tast of this and is always a hit when ever I make it. This is one of those dishes that I uslually don't measure anything. Of course as usual I'll try to measure the best I can.

Ingredients
- 2 1/2 to 3 pounds boneless pork loin
- - cooking spray
- 3 large apples, sliced (most any apple is good)
- 1 tablespoon butter
- 2 tablespoons cinnamon
- 1/4 cup sugar
- 1 cup port wine
How To Make norma's pork loin with fried apples

Step 1Preheat you oven to 350.

Step 2Spray fry pan with cooking spray and heat on medium-high heat until hot.

Step 3Add pork loin and brown on all sides to hold in juices.

Step 4Place browned pork loin is a small oblong roasting pan with a lid.

Step 5Place in oven and bake for 1 1/2 hour.

Step 6Meanwhile, peel and slice apples in a frying pan, add butter, sugar and cinnamon.

Step 7Cook apples on medium-high heat turning often to coat apples with cinnamon sugar and butter.

Step 8Fry apples until they are tender, but not cooked too soft.

Step 9Remove apples from heat and set aside.

Step 10When pork loin has baked for 1 1/2 hour; remove from oven and add the apples on top of loin and on sides..

Step 11Poor port wine on apple and loin and cover and return to oven to cook for another hour or so. Or until port wine has become a thick syrup.

Step 12Remove from oven and place loin and apples on serving tray and pour thick syrup over all and serve with your favorite side dishes.
