This is a traditional meal for New Years. I have been looking for a recipe like this for awhile and finally found one I liked. I love sauerkraut and love meat cooked in it. This reminds me of my childhood and I will be making it for New Years. I tweaked the recipe a bit because I read all the comments as I find them helpful. You can also tweak it to your tastes as well by adding beer, brown sugar, onions, potaoes, etc to make it your own. This is how I like it and I can not wait to make this! Boiled or mashed potatoes and peas would be great with this. Happy New Years everyone!

Ingredients

  • 2 pounds boneless pork loin roast
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons caraway seeds
  • - salt and pepper to taste
  • 4 pounds sauerkraut
  • 1 pound kielbasa, cut into 3-inch pieces

How To Make new years dinner

  • Step 1
    In a skillet, on medium-high add the olive oil. Sprinkle the roast with salt and pepper and pan sear the roast to give a nice brown outside appearance, about 10 minutes.
  • Step 2
    Place 2 pounds sauerkraut in a slow cooker. place the roast in the center. Sprinkle the roast with the caraway seeds. Cover with remaining sauerkraut.
  • Step 3
    Cover slow cooker, and cook roast 4 hours on High. Brown the cut up kielbasa for about 5 minutes and place in slow cooker and continue to cook 2 more hours or until pork is tender. (Do check at 5 hours in as some slow cookers cook hotter than others. My daughters slow cooker cooks really hot compared to mine.)
