neapolitan pork chops and spaghetti

This recipe does not take much time, it's an old stand by. Everybody in my family loves it. Try it I'm sure you will like it.

Ingredients

  • 1-28 ounce can italian tomatoes
  • 1- 6 ounces can tomato paste
  • 2 cloves garlic minced
  • 2 teaspoons kosher salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon oregano, dried
  • 1/2 teaspoon sweet basil dried
  • 1/4 teaspoon sage, dried
  • 1 - bay leaf
  • 2 cups water
  • 4 - lean pork chops, about 11/2 lb.
  • 8 ounces fine spaghetti

How To Make neapolitan pork chops and spaghetti

  • Step 1
    Put first 10 ingredients into a large saucepan.
  • Step 2
    Bring to a boil and simmer, uncovered, for 1 hour stirring occasionally.
  • Step 3
    Trim meat from chops, leaving it in large pieces. Brown on all sides in a skillet.
  • Step 4
    Add meat and drippings to sauce and simmer for 1 hour longer.
  • Step 5
    Cook and drain spaghetti. Put on hot platter and cover with pork and sauce.

    Makes 4 Servings

    TIP: remove bay leaf before serving
