Years ago,my sister gave me a Avon International cookbook and I found this recipe in it ,it has become a family favorite. This is the original recipe but I often use shrimp or chicken instead of pork. Just as delicious.
1Cook rice. Set aside. Melt butter add pork, cook 5-8 mins. till golden add onions cook 10 mins. Add vegetables, cook 5 mins. Stir in soy sauce and spices. Stir in rice until combined and hot.
In a bowl,beat egg with water,salt and pepper. Melt butter in a small skillet add egg mixture. Cook gently till underside is golden. Turn and brown other side. Slide onto a plate. Cut into 1-/2 inch strips. Spoon rice into a warmed serving dish,top with egg strips.
Garnish with tomato wedges and green onion curls.
