Ingredients

  • PORK CHOPS AND RUB
  • 4 pork chops. thick-cut, bone-in
  • 3 tablespoons whole mustard seeds
  • 1 teaspoon black peppercorns
  • 1 tablespoon coarse salt
  • 2 teaspoons ground mustard
  • BAKING SAUCE
  • 3 tablespoons Dijon mustard
  • 4 cloves garlic, minced
  • 1/2 cup white wine
  • GARLIC MUSTARD SAUCE
  • 2 shallots, finely chopped
  • 8 cloves garlic, minced
  • 2 teaspoons dried tarragon
  • 1/2 cup tarragon vinegar
  • 1/4 cup brandy or apple juice
  • 4 large egg yolks
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons stoneground mustard
  • 1/2 cup butter, melted and hot
  • salt

How To Make mustard rubbed pork chops with garlic mustard sauce

  • Step 1
    Grind the mustard seed, peppercorns, and salt in a spice grinder. Mix in the ground mustard and rub it on both sides of the chops. Set aside for 30 minutes.
  • Step 2
    Mix the baking sauce ingredients and set aside.
  • Step 3
    To make the garlic mustard sauce, add a little oil to a saucepan. Add the shallots, tarragon, garlic, tarragon vinegar, and apple juice. Cook until almost all the liquid evaporates; set aside.
  • Step 4
    Melt the butter until it's hot. Place the egg yolks, lemon juice, and both mustards in a food processor. Process for 10 seconds, then stream in the hot butter and process until thick.
  • Step 5
    Taste and adjust for salt. Add the shallot mixture and set aside, and keep warm.
  • Step 6
    Preheat the oven to 450 degrees F. Get a cast iron pan nice and hot and add a little oil. Sear the chops about 2 1/2 minutes each side.
  • Step 7
    Transfer the chops to a baking dish and pour the baking sauce over the chops.
  • Step 8
    Place in the oven for another 5 minutes, basting with the sauce.
  • Step 9
    Remove the chops from the oven and let them rest 10 minutes. Serve with the sauce.
