muffin tin meatloaf w/salsa

My family loves this easy to make kid friendly meatloaf. I have also made it for a charity dinner people really enjoy the idea of having their own little meatloafs.

Ingredients

  • 2 pounds ground beef
  • 1 pound gound pork
  • 2 cups bread crumbs (add more if needed)
  • 1 cup chopped onion
  • 1 cup chopped green peppers
  • 3 - eggs
  • 1 jar salsa, chunky i use mild but use what you prefer
  • - salt and pepper
  • - ketchup

How To Make muffin tin meatloaf w/salsa

  • Step 1
    Pre-heat oven at 350 you will need 2 muffin tins. Mix ground beef and pork together completely add in eggs breadcrumbs onions green peppers salt and pepper mix add salsa mix all together.
  • Step 2
    Put ketchup or salsa on the bottom of each muffin tin. Scoop mixture into muffin tin do not press down leave loose so meatloaf is light. Pile it up and put ketchup on top of each.
  • Step 3
    Bake for aprox 20 mins. Use a spoon to go around the edges they usually just pop right out. Kids love them. Simple at that.
