Ingredients

  • 3 - shallots
  • 1 1/2 tablespoons rosemary, fresh, chopped
  • 1 - orange, zested & juiced
  • 1/3 cup plum jelly
  • - salt & pepper, to taste
  • - pork roast

How To Make *** mom's plum pork roast ***

  • Step 1
    Preheat oven to 425 degrees F.
  • Step 2
    In food processor, pulse shallots, rosemary, 2 Tbsp orange juice, 1 Tbsp orange zest, salt & pepper; 30 seconds.
  • Step 3
    Place pork roast in roasting rack/pan. Brush orange mixture on pork. Roast 15 minutes. Reduce heat to 350 degrees F. Roast 45 minutes more.
  • Step 4
    In bowl, combine plum jelly, 1 Tbsp orange juice, 1 Tbsp orange zest; mix well. Brush on meat the last 15 minutes of cooking.
