Ingredients
- 3 - shallots
- 1 1/2 tablespoons rosemary, fresh, chopped
- 1 - orange, zested & juiced
- 1/3 cup plum jelly
- - salt & pepper, to taste

How To Make *** mom's plum pork roast ***

Step 1Preheat oven to 425 degrees F.

Step 2In food processor, pulse shallots, rosemary, 2 Tbsp orange juice, 1 Tbsp orange zest, salt & pepper; 30 seconds.

Step 3Place pork roast in roasting rack/pan. Brush orange mixture on pork. Roast 15 minutes. Reduce heat to 350 degrees F. Roast 45 minutes more.

Step 4In bowl, combine plum jelly, 1 Tbsp orange juice, 1 Tbsp orange zest; mix well. Brush on meat the last 15 minutes of cooking.
