Ingredients

  • 2 tablespoons olive oil, extra virgin
  • 1 - lemon, zested & juiced
  • 4 cloves garlic, peeled & chopped
  • 1 tablespoon sage leaves, fresh, chopped
  • 2 tablespoons thyme, fresh, chopped
  • 1 tablespoon rosemary, dried
  • 1 teaspoon salt & pepper
  • 3 pounds boneless pork roast or lamb roast

How To Make *** mom's crown roast (lamb or pork) ***

  • Step 1
    Preheat oven to 450 degrees F.
  • Step 2
    In bowl, combine, oil, 1 tsp lemon zest, 1 Tbsp lemon juice, garlic, sage, thyme, rosemary, salt & pepper.
  • Step 3
    Place roast in roasting rack/pan. Brush mixture all over meat. Roast 20 minutes (for medium rare). Sit 10 minutes before slice.
