miso soup with mushrooms, kale and pork

We love Asian flavors so I am always playing with them.

Ingredients

  • 1 - recipe korean spicy pork (one of my other recipes)
  • 6 cups water
  • - miso concentrate, i use miso easy, use the amout specified on the produce
  • 1/4 cup chopped onion
  • 1 tablespoon grated fresh ginger
  • 1/2 cup sliced mushrooms
  • 2 cups loosely packed baby kale
  • 8 ounces thin spaghetti

How To Make miso soup with mushrooms, kale and pork

  • Step 1
    Add a little oil to a pan and saute the onion until tender.
  • Step 2
    Add the ginger, miso concentrate, and water. Bring to a boil and reduce to a simmer
  • Step 3
    Cook the noodles according to package directions.
  • Step 4
    Cook the Korean marinated pork.
  • Step 5
    Add the kale and mushrooms to the soup and cook until the kale is done, a few minutes.
  • Step 6
    To assemble - mound noodles in each of 4 soup bowls. Pour the soup over. Top with the pork and serve.
