How To Make min's potato soup
-
Step 1Peel potatoes, cut into bite size pieces. Place in a pot, cover with cold water, cook potatoes til just tender, about 15 minutes. Drain, let cool. While potatoes are cooking, saute celery and onions. ( to save time, you can cook celery & onions in pot w potatoes).
-
Step 2In a crock pot or large pot, combine all the ingredients. Cook on low.
-
Step 3Whisk eggs in a large bowl, add flower and shortening as needed. I make as many dumplings as possible, different sizes. Add dumplings to pot, let cook w the soup.
