min's potato soup

This is simple, yet so full of flavor! We loved our mom's recipe, but I made it lil better! My daughter loves to help w the chopping and dumplings! Have hub peel potatoes, easy peazy! Great for a Sunday dinner, football, or potluck. also freezes well..IF u have any left! Most of ingr. u will already have on hand!

Ingredients For min's potato soup

  • 3 lb
    potatoes, russets
  • 4 lg
    celery stalks, chopped
  • 1 lg
    yellow onions,chopped
  • 3
    green onions, chopped
  • 1 bunch
    fresh parsley
  • 1/2 stick
    butter
  • buttermilk
  • pkg
    chopped ham
  • 6 slice
    bacon bits
  • whole milk
  • DUMPLINGS
  • 3 lg
    eggs
  • shortening, butter flavor
  • salt and pepper, to taste
  • all purpose flour

How To Make min's potato soup

    Peel potatoes, cut into bite size pieces. Place in a pot, cover with cold water, cook potatoes til just tender, about 15 minutes. Drain, let cool. While potatoes are cooking, saute celery and onions. ( to save time, you can cook celery & onions in pot w potatoes).

    In a crock pot or large pot, combine all the ingredients. Cook on low.

    Whisk eggs in a large bowl, add flower and shortening as needed. I make as many dumplings as possible, different sizes. Add dumplings to pot, let cook w the soup.
