I don't care for chili beans, so I adapted my own recipe! I always get rave reviews and requests for the recipe. It's a crowd-pleaser. My husband doesn't want me to post this recipe, but it's too good not to share. I like to do the prep ahead of time when I can.

Blue Ribbon Recipe

With lots of heat and tons of flavor, this chili is especially tasty and hearty. Add a big dollop of sour cream to cap it off and cool it down. Serve with tortilla chips or a big chunk of cornbread.

  • 2 cans diced tomatoes (14.5 oz each)
  • 1 can tomato juice, large (46 oz)

  • 1 tablespoon cumin
  • 1 tablespoon cayenne pepper
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 bunch fresh cilantro, rough chop

How To Make min's omg chili!

  • Chopped bacon on a paper towel.
    Step 1
Preheat oven to 400 degrees. When heated, place bacon on a cookie sheet for approximately 12 min. Let drain on paper towels. When cool, give a rough chop, and set aside.
  • Saute celery, onion, green pepper, jalapeno peppers, and garlic.
    Step 2
Meanwhile, spray a large skillet with cooking oil. Saute celery, onion, green pepper, jalapeno peppers, and garlic over medium heat until tender.
  • Ground beef and sausage added to the skillet.
    Step 3
Then add ground beef and sausage. Cook until no longer pink; drain.
  • Chili simmering in a slow cooker.
    Step 4
In a large pot or Crock Pot, add meat/veggie mixture. Add all remaining ingredients. Stir. Let simmer on low for 3 hours. Enjoy! Optional toppings: shredded sharp cheddar cheese, diced onion, sour cream, bacon, and cilantro. I have served this in a bread bowl and let guests choose their toppings. Makes a nice presentation too!
