min's lasagna

My mom made this a family fav. I have tweaked it slightly to suit my familys tastes...w her same lasagna pan! So worth it! And can freeze & reheats beautifully!

Ingredients

  • 1 pound ground beef
  • 1/2 pound italian pork sausage
  • 1 package lasagna noodles, uncooked
  • 2 - eggs
  • 2 cups shredded mozzerello
  • 1 bunch fresh parsley
  • 1 cup parmigiano-reggiano, grated
  • 1 cup cottage cheese, lowfat
  • 1/4 cup water
  • 16 ounces ricotta cheese, part-skim
  • 3 cloves garlic, chopped
  • 1 teaspoon salt and pepper
  • 3/4 teaspoon oregano, dried
  • 2/3 cup olive oil, extra virgin
  • 1 - yellow onions, chopped or grated
  • 1 - green bell pepper, chopped

How To Make min's lasagna

  • Step 1
    Preheat oven to 350 degrees. In a large skillet on med-high heat, add chopped onion, green pepper. (My kids are picky, so I grate the onion in, same flavor, they never even know its there!). Cook approx. 6 minutes, then add ground beef, sausage, garlic, salt, pepper, oregano. Cook til no longer pink, drain. In a medium bowl, whisk eggs, add ricotta, cottage cheese, 1/4 cup parsley, 1/4 cup parmesean.
  • Step 2
    In a 9x13 coated pan, add 1/4 cup spaghetti sauce, spread along the bottom. Then add uncooked lasagna noodles across the pan. Next, layer ricotta mixture on top of noodles. Add layer of meat. Repeat layers, top w remaining sauce & cheese. Sprinkle water over top of layers, add remaining parsley. Cover w foil for 50 minutes, remove foil, bake an additional 15 minutes. Let cool 5 minutes. Enjoy!
