Mexican Style Crock-Pot Pork

I had a small pork roast and wanted to do something different with it. So, I started adding a few things to my crockpot and came up with this.You can use this as a filling for burritos,tacos, chimichangas, or even put it on a hamburger bun.   • 1 1/2 lb
    boneless pork roast
  • 1/2 c
    each of red and green pepper, diced
  • 1/3 c
    finely chopped celery
  • 1/2 c
    finely chopped sweet onion
  • 1 tsp
    ground cumin
  • 1/2 tsp
    each of seasoning salt and garlic powder,( feel free to add more garlic powder)

How to Make Mexican Style Crock-Pot Pork


  1. Place the roast in a 2 quart crockpot
  2. Add rest ingredients over meat
  3. Cook for 6 hours on low, remove meat and shred.
  4. Return meat to pot and stir to mix in the juices and cook for one more hour.
