- 2 - onions, chopped
- 2 - carrots, peeled and sliced
- 5 pounds pork loin
- 2 teaspoons salt
- 1/2 teaspoon oregano
- 1/2 teaspoon coriander, ground
- 3/4 cup beer
- SAUCE INGREDIENTS
- 2 tablespoons olive oil
- 1 - onion, chopped
- 1 - garlic clove, chopped
- 10 ounces tomatillos
- 1/2 teaspoon oregano, dried
- 1/2 teaspoon cilantro, dried
- 2 tablespoons wine vinegar
- pinch salt
- pinch pepper

Step 1Heat oil in small skillet; saute onion and garlic until limp.

Step 2Drain tomatillos; reserve liquid.

Step 3Combine tomatillos, 1/2 cup reserved liquid, onion, garlic, oil, oregano and cilantro in jar of electric blender; puree.

Step 4Heat skillet over moderate heat.

Step 5Pour in sauce; cook 10 minutes.

Step 6Remove from heat; add wine, vinegar, salt and pepper.

Step 7Chill sauce; serve with pork.
