    carrots, peeled and sliced
  • 5 lb
    pork loin
  • 2 tsp
    salt
  • 1/2 tsp
    oregano
  • 1/2 tsp
    coriander, ground
  • 3/4 c
    beer
  • SAUCE INGREDIENTS

  • 2 Tbsp
    olive oil
  • 1
    onion, chopped
  • 1
    garlic clove, chopped
  • 10 oz
    tomatillos
  • 1/2 tsp
    oregano, dried
  • 1/2 tsp
    cilantro, dried
  • 2 Tbsp
    wine vinegar
  • pinch
    salt
  • pinch
    pepper

How to Make Mexican Pork Roast Cooked In Beer

Step-by-Step

  1. Heat oil in small skillet; saute onion and garlic until limp.
  2. Drain tomatillos; reserve liquid.
  3. Combine tomatillos, 1/2 cup reserved liquid, onion, garlic, oil, oregano and cilantro in jar of electric blender; puree.
  4. Heat skillet over moderate heat.
  5. Pour in sauce; cook 10 minutes.
  6. Remove from heat; add wine, vinegar, salt and pepper.
  7. Chill sauce; serve with pork.
