Ingredients

  • 2 - onions, chopped
  • 2 - carrots, peeled and sliced
  • 5 pounds pork loin
  • 2 teaspoons salt
  • 1/2 teaspoon oregano
  • 1/2 teaspoon coriander, ground
  • 3/4 cup beer
  • SAUCE INGREDIENTS
  • 2 tablespoons olive oil
  • 1 - onion, chopped
  • 1 - garlic clove, chopped
  • 10 ounces tomatillos
  • 1/2 teaspoon oregano, dried
  • 1/2 teaspoon cilantro, dried
  • 2 tablespoons wine vinegar
  • pinch salt
  • pinch pepper

  • Step 1
    Heat oil in small skillet; saute onion and garlic until limp.
  • Step 2
    Drain tomatillos; reserve liquid.
  • Step 3
    Combine tomatillos, 1/2 cup reserved liquid, onion, garlic, oil, oregano and cilantro in jar of electric blender; puree.
  • Step 4
    Heat skillet over moderate heat.
  • Step 5
    Pour in sauce; cook 10 minutes.
  • Step 6
    Remove from heat; add wine, vinegar, salt and pepper.
  • Step 7
    Chill sauce; serve with pork.
