meaty lasagna roll-ups

I made this one with my kids in mind, absolute hit! We start an assembly line and make quick work of it. Plus the kids really enjoy eating something they helped prepare! So good!

Ingredients

  • 1 package lasagna noodles
  • 16 ounces ricotta cheese, part-skim
  • 1 cup cottage cheese, small curd
  • 1 large egg
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon oregano, dried
  • 24 slices pepperoni
  • 10 slices mozzerella cheese, cut in thirds
  • 1 jar meatless spaghetti sauce
  • 1 cup shredded parmesan cheese
  • 1/2 pound ground beef
  • 1/2 pound italian pork sausage
  • 1/2 bunch fresh parsley

How To Make meaty lasagna roll-ups

  • Step 1
    Cook the noodles according to package, drain. (I like to add a lil EVOO to noodles while they cool so they don't stick together). Combine the ricotta, cottage cheese, whisked eggs, oregano, and basil. Lay noodles out flat, spread mixture over each noodles to within 1/2 inch of edge. Top with 3 pepperoni slices and Swiss cheese, carefully roll up.
  • Step 2
    Place seam down in a greased shallow baking dish. Meanwhile, in a large skillet, cook ground beef and sausage til no longer pink, drain. Top rolls with meat mixture and spaghetti sauce. cover and bake at 350 degrees for 20-25 minutes. Sprinkle w parmesan. Let stand for 5 minutes before serving. Enjoy...

    Hamburger and sausage may be omitted but we really enjoy all the meat. I have even added the meat before rolling the noodles up. Great served w bread sticks. I sometimes add the fesh parsley to ricotta mix, and also add on top of cheese at the end for garnish, gives great color!!!
