meatloafy wonderfulness!
Who doesn't like meatloaf? Better yet...who doesn't like leftover meatloaf sandwiches? I was raised on this wonderful comfort food. Since I am now following a low carb diet, I have had to tweak this a bit, but it is still one of my favorites! I use ground flax seeds instead of the usual bread crumbs or crackers, but feel free to use your favorite breading in the recipe. Instead of using bread in a sandwich, I wrap the leftovers up in lettuce and still get to enjoy the ever popular meatloaf sandwich, (that is...if there are any leftovers).

Ingredients
- 1 pound ground beef
- 1 pound italian sausage, mild
- 1 small yellow onion
- 1 - celery
- 1/2 medium red and/or green bell pepper
- 3 - green onions
- 4 cloves garlic
- 6-10 - mushrooms
- 2 - eggs
- 2 teaspoons italian seasoning
- 2 teaspoons salt
- 1 teaspoon pepper
- 2/3 cup pepper jack cheese, shredded
- 3 tablespoons ground flax seeds (flax meal)
How To Make meatloafy wonderfulness!

Step 1Place ground beef and Italian sausage (casings removed) in large bowl and combine well. Place all vegetables into a food processor and pulse till chopped pretty small. Add to meat and mix well.

Step 2Beat eggs with seasonings and then add cheese and stir to coat. Add to meat and combine well. Add flax meal (or regular bread crumbs if you prefer) to mixture and mix well to combine. (At this point, I usually take a small amount and fry it so that I can taste and see if it needs any further seasonings).

Step 3Place in a baking dish sprayed with vegetable spray and bake for 55 minutes. (Time will depend on the depth and size of the pan that you use. I used an 8X8 glass pyrex dish).
