Meatloaf with Sweet-and-Hot Sauce

Ingredients

·preheat oven to 400 d/f, spray an 8 1/2
-
·1 lb ground pork and 1/2 lb ground beef
-
·1 c plain bread crumbs soaked with a small amount milk
-
·1 large egg, lightly beaten
-
·1 clove garlic, minced
-
·1/2 cup onion, diced
-
·3 tbls fresh flat leaf parsley or 1 tbls dried
-
·1/4 c low sodium chicken broth
-
·1 tsp salt and freshly ground black pepper to taste

·for sweet and hot sauce:
-
·1/3 cup prepared ketchup or tomato sauce - i used heinz ketchup
-
·1/2 cup sugar
-
·1/3 cup water
-
·1/3 cup white wine vinegar
-
·1 tbl low sodium soy sauce
-
·1/2 tsp cayenne pepper or to your taste

·1 1/2 tbls cornstarch mixed with 3 tbl cold water
How to Make Meatloaf with Sweet-and-Hot Sauce
- Combine ingredients for meatloaf; mix well. Spray pan with Pam. Place into loaf pan and bake until an instant read thermometer inserted in middle of loaf reads 155 D/F 45 to 50 minutes. While this is cooking, make the sauce.
- In a saucepan over medium-high heat, combine the ketchup (or tomato sauce), sugar, water, vinegar, soy sauce and cayenne. Heat stirring occasionally, until the mixture comes to a boil, then immediately whisk in the cornstarch/water mixture. Stir constantly until thickened, about 30 seconds. Remove from the heat and let cool to room temperature.
- When the meat loaf is done, remove it from the oven, cover to keep warm, and let stand for 10-15 minutes before slicing. Pour off any excess fat in the pan. Cut the meat loaf into slices 1/2 inch thick. Serve immediately with the sweet-and-sour sauce on the side.
