meatloaf with a twist

If you enjoy a good meatloaf this recipe is one you've got to try. I did some experimenting with ingredients and it turned out to be one of the best meatloaves I've ever made. Flavorful, moist, holds together...yummy. Give it a whirl fellow cooks.

Ingredients

  • 1 1/2 pounds ground beef
  • 1/2 pound bulk pork sausage
  • 1/2 large onion (chopped)
  • 2 large eggs
  • 3 small fresh tomatos, chopped
  • 1 1/2 cups oyster crackers, non-crushed
  • dash salt
  • dash black pepper
  • dash garlic powder
  • dash basil, dried
  • dash crushed red pepper, dried
  • 1 medium apple
  • SAUCE FOR TOP
  • 1 1/2 cups ketchup
  • dash yellow mustard
  • dash lemon juice
  • 1/4 cup brown sugar

How To Make meatloaf with a twist

  • Step 1
    In a large bowl combine first eleven ingredients. Do not add apple yet. Make sure ingredients are well combined. Place meat mixture in baking dish. Peel, core & slice apple. Make a tunnel in middle of meatloaf. Arrange apple slices & cover with meat mixture.
  • Step 2
    Bake uncovered at 300 degrees for 1 hr. Place sauce ingredients in small bowl & mix well. Remove dish from oven. Drain excess fluids. Add sauce. Cover with aluminum foil. Turn oven down to 250 degrees. Place dish back in oven for 30 minutes. Remove from oven & let set for 5-10 minutes before serving.
